Gastronomy is getting more and more important as a tool to attract tourism to Spain. A total of 7,4 million foreign tourists visited our country last year in order to enjoy our culinary richness.
Gastronomy is listed as an outstanding value to meet international visitors who come to our country, especially in some locations. Spanish cuisine is the second preference of Europeans just after the Italian, according to the annual survey conducted by Travel & Drink Travel web TripAdvisor among users of the continent.
«Gastronomy in Spain is a differential value, and gives us real competition from other destinations,» says the general secretary of the Federación Española de Hostelería y Restauración (FEHR), Emilio Gallego.

The secret to success, according to the escuela de Hostelería de Madridy, is the great culinary variety in Spain, the wealth of products and the many ways to cook, plus creativity in handling and preparation.
«The Spanish cuisine is synonymous with Mediterranean diet, product quality and proximity, in a special way to understand the food, in good company, with after-dinner and accompanied by a good glass of wine,» he explained from the Spanish Capital of Gastronomy, they ensure that the Spanish cuisine has crossed borders «unapologetic».

Public support

The appeal of our dishes will be extended to other countries through the Compañía Española de Financiación de Desarrollo (Cofides) which will make use of 15 million euros for the internationalization of restaurants, with loans ranging between 75,000 and one million euros per project.
Gastronomy in Alcalá
Alcalá de Henares’s gastronomy is plenty of typical dishes of Castilla-la Mancha cuisine alluding archetypal Don Quixote’s meals such as: garlic soup, fried breadcrumbs with chorizo or fried eggs, and a great variety of dishes made with fresh Vega del Henares vegetables; besides the tastiest roast lamb or kid, or several baked fishes such as sea bream or bass.
Some deep-rooted customs are still maintained today in Alcalá, like chocolate-based evening meals. The Hostería del Estudiante—the most well-known and traditional establishment of the city that belongs to the National Network of Paradores— offers delights such as chocolate with breadcrumbs and fried bread.
In the matter of confectionery, Costrada, Almonds of Alcalá, Tejas of Alcalá and the excellent Rosquillas of Alcalá are highly recommended, but just some of the many specialties you can taste.
Some of those recipes can be founded in the city’s main restaurants guide. Even though, it is in the two annual gastronomical events, the Gastronomic Week and the Cervantes Gastronomical Days, when the visitor has plenty of opportunities to taste recipes such as “the island kid”, “Dorotea’s stewed meat”, “quails in old wine” or “pastoral rabbit”. Additionally, products such as Iberian cold meat or sheep cheeses with a glass of wine can be savored in the city’s bars.
